CHEF GERALD ONG
Hailing from the culinary diverse city state of Singapore, Gerald Ong honed his culinary skills at the esteemed Le Cordon Blu Sydney. His journey has led him through the prestigious kitchens of hatted Sydney restaurants, such as Automata and Portenos, blending the abundant produce of Australia with the authentic flavours of his homeland in Asia. Along the way, mastering the art of creating dishes that truly tantalise the taste buds.
In 2017, Gerald's quest for knowledge led him Canberra, where he humbly learned the art of Cantonese cuisine from the revered wok masters of Chairman and Yip. Under their tutelage, Gerald flourished, earning a coveted chef hat and an esteemed place in the alumni. His culinary prowess shone bright when he was crowned the Canberra finalist for Josephine Pignolet Young Chef of the Year in 2020.
Since then, he has mystified and delighted diners with his cult pop-up, Project Enoki, in the enigmatic Verity Lane Market. Alongside his wife, Esther, he has also conjured up tantalizing treats at their bakery, Sourdog Provisions.
Gerald's cuisine promises an explosion of authentic flavours, celebrating the finest produce at its core. His food is captivating enough to lure the adventurous, yet familiar enough to welcome back locals, time and time again. He now commands the Chinese & South East Asian concepts for Tiger Lane, under the enigmatic Executive Chef Shaun Presland's guidance.
